Here’s a valuable addition to your bookshelf: “Techniques for Teaching Law 2” (Gerald Hess, Steven Friedland & Sophie Sparrow ed.) (Carolina Academic Press 2011). The book contains a great number of explanations of general teaching principles and of concrete teaching ideas from a wide variety of law professors who care about teaching.
